Ok ok…I know. I am not exactly reinventing the wheel here with Cornflake Chicken. But you know who doesn’t know that? My husband. Because when I tell him that we are having Cornflake Chicken for dinner, I get treated good. Like, real good. Like bringing me flowers and rubbing my feet and watching My So-Called Life on DVD with me good. So please, could you all do me a favor and not tell my husband that Cornflake Chicken is like, actually pretty healthy? I might even go so far as to say it’s very healthy…at least it is when I get through with it…

Kitty’s Cornflake Chicken
serves 2 – 3

 

6 large bone-in, skinless chicken thighs (I try to buy the organic kind)
2 eggs w/ a dash of milk *
1 cup organic cornflakes
1 cup high fiber multigrain cereal flakes
1 heaping tablespoon Emeril’s Essence (or poultry seasoning + paprika)
1/2 cup shredded parmesan cheese
salt & pepper
olive oil cooking spray

 

Step 1: Preheat oven to 350F. In a plastic sandwich bag, combine cereals, seal bag, and mash into large crumbs using a rolling pin. Add to a bowl, and combine with the cheese and Emeril’s seasoning. In a separate dish, beat the eggs with a dash of milk, and a pinch of salt & pepper. (*Alternatively, you could brine the chicken in buttermilk, and skip the egg step, using the buttermilk as the glue.)

Step 2: Set a wire rack on a cookie sheet, spraying the rack lightly with the olive oil spray. Dip each chicken thigh into the egg mixture, then in the cereal mixture, covering as evenly as possible. Place the chicken thighs on the wire rack, and spray each one lightly with the olive oil.

Step 3: Bake in the oven for 1 hour. Juices will run clear when the chicken is done.

I started out months ago just making regular cornflake chicken…then I read the side of the Kellogg’s box. Something tells me that when dear Doc Kellogg first served those little flakes up at his famous health spa, he wasn’t making them with high fructose corn syrup. So I took a chance and bought the fruit juice sweetened, organic kind at the health food store. My husband never noticed a thing. So that’s when the next logical step occured…and I started using half high-fiber flakes. Trust me, no complaints. My head has already started going to zany places where I pulverize cauliflower and coat it on there…but maybe I should quit while I’m ahead…Angela hasn’t even kissed Jordan Catalano yet.
